Easter Bunny Pancakes – for Easter Breakfast!

If you love pancakes, then you’ll enjoy making these bunny pancakes for Easter. This pancake recipe is easy to make  – but you can always buy pancake mix and use that too!

Tips for Making:

  • Ensure your baking powder is fresh. If the baking powder has expired, your pancakes will not be as fluffy.
  • You can use pancake mix to make the pancakes instead of following the recipe. Use the same measurements to create the shapes for the bunny.
  • Banana slices and chocolate chips can be used instead on the feet.
  • Instead of a marshmallow you can also use whipped cream or banana slice for the tail.
  • Any kind of milk can be used in this recipe – whole, 2%, fat-free.
  • You can add 1 teaspoon of vanilla to the milk mixture if desired.

Tip for Making Pancake Shapes

To Make Circles: Use a turkey baster! Use the turkey baster to get the pancake mix, then apply to your pan. The shape will turn out round.

To Make the Ears/Feet: Use a squeeze bottle.

What Kind of Oil?

  • Use a liquid oil rather than spray oil, if possible. Spray oil can cause the pancake to have a blotchy appearance.
  • I recommend lightly wiping the pan’s surface with a paper towel after applying the oil or butter. This will help spread the oil evenly and remove any large patches that may cause uneven cooking.
  • Can you use butter instead? Yes, the pancakes will be darker if you use butter on the pan rather than oil.

How to Store:

  • Store leftovers in the refrigerator for up to three days. Reheat in the microwave in 30-second increments before enjoying.
  • Leftover pancake batter can be stored in an airtight container in the refrigerator for up to three days.

How Many Bunny Pancakes Does this Make?

  • You should be able to get 2 full body bunnies with a little extra pancake mix left over. Double the recipe if needed to make more bunnies in one session.

Easter Bunny Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 large egg
  • Oil *for greasing pan
  • M&Ms in Easter or pastel colors
  • Large marshmallows
  • Edible Grass (optional for decoration on the plate). You can also use coconut flakes with green food coloring.

How to Make a Bunny Pancake

1. See our pancake recipe below, or use pancake mix.

2. Make the bunny parts out of pancake batter:

Make a medium-sized round pancake.

Use the ¼ measuring cup of pancake batter for the body circle. Using a turkey baster will help make the shape a circle.

Next, make a small round pancake for the head.

Use 1.5 tablespoons of pancake mix.

Using a squeeze bottle, make 2 small triangles for the bunny’s feet.

Using the squeeze bottle, make 2 small ovals for the bunny ears.

2. Assemble the bunny:

Lay the small pancake down first, then place the larger one on the plate, overlapping it slightly.

Tuck the 2 ovals under the small pancake for the bunny ears.

Lay the 2 small triangles at the bottom of the large circle, overlapping slightly for the bunny feet.

Place some M&Ms on the bunny feet.

Add the marshmallow for the tail.

Optional: using a large marshmallow, press down on the top of it to flatten it a little bit. Then using scissors, cut 7 slits in the marshmallow all the way around it. This will make a fluffy white tail for the bunny’s backside. (If you don’t want to cut the slits, then just cut the marshmallow in half).

Bunny Pancakes

An easy recipe for making bunny pancakes.

Ingredients

  • 1 Cup all purpose flour
  • 2 tbsp sugar *granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 2 tbsp unsalted butter *melted and cooled
  • 1 egg
  • oil *for greasing pan
  • 4 large marshmallows
  • 6 Easter M&Ms

Instructions 

  • Preheat the oven to 400 degrees F.
  • Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  • Next combine the milk, butter (melted and cooled), and egg in a small bowl and whisk together.
  • Add the wet ingredients to the dry and mix until well combined. Allow the mixture to sit for 5-10 minutes before cooking it.
  • Preheat a griddle or large skillet over medium-high heat for 2-3 minutes. Reduce the heat to medium and lightly grease the surface with oil.
  • Add ¼ cup of batter to the griddle, this will be the body of the bunny. Once bubbles form on the top of the batter, flip the pancake and cook the other side.
  • Use 1 ½ tablespoons of batter to form a medium circle for the bunny's head.
  • Using a squeeze bottle, make 2 small triangles for the bunny's feet.
  • Using a squeeze bottle, make 2 ovals for the bunny's ears.
  • Using scissors, cut slits in the large marshmallow.
  • To assemble the bunny, lay the small pancake down first, then place the larger one on the plate, overlapping it slightly. Tuck the 2 ovals under the small pancake for the bunny ears. Lay the 2 small triangles at the bottom of the large circle, overlapping slightly for the bunny feet. Place some M&Ms on the bunny feet. Place the marshmallow in the center of the large pancake for the tail.
