Teddy Graham Beach Cookies

Ingredients Needed

Here are all of the ingredients you need to make these cookies:

  • ½ cup unsalted butter, room temperature (1 stick)
  • 4 ounces cream cheese, room temperature (½ block)
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch kosher salt
  • Blue food coloring

Storing Tips

  • Store any leftovers in the refrigerator as the frosting contains cream cheese.

Can you Freeze the Cookies?

  • We do not recommend freezing the cookies after decorating due to the cream cheese frosting.
  • Undecorated cookies can be frozen. Wrap in foil and freeze in an airtight bag for up to 3 months. Defrost cookies before decorating.

Frosting Tips

  • You can make the frosting up to 3 days early and store in an airtight container in the refrigerator. Before decorating the cookies, beat on high for 1 minute before using.
  • Don’t worry about making the frosting look smooth on the cookies – the unevenness will make it look more like waves!

Beach Cookies

Ingredients

Cookie Ingredients

  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs

Frosting Ingredients

  • 1/2 cup unsalted butter
  • 4 ounces cream cheese
  • 2.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • blue food coloring

Instructions 

Cookie Instructions

  • Preheat the oven to 350 degrees F. Add parchment paper to the cookie sheet and set aside.
  • Make the cookie batter by mixing the cake mix, oil, and eggs in a large bowl until well combined. The batter will be thick.
    Add flour and eggs to bowl
  • Scoop the dough onto your cookie sheet.
    Add cookie batter to tray
  • Bake for 10-12 minutes or until done.

Frosting Instructions

  • Add the butter and cream cheese into a bowl and beat with a hand or stand mixer until smooth.
  • Add the powdered sugar, vanilla, salt, and food coloring and beat until combined.

  • Frost the cooled cookies and decorate as desired.

Cookie Decorating

  • Create the decorations by placing the teddy grahams into the peach rings. Use graham cracker crumbs to create sand and add some teddy grahams on rainbow belt candy on top. Add some goldfish graham crackers and then add some pearl sprinkles on top for bubbles. Add a few umbrella drinks to the cookies.
  • Decorate the cookies while the frosting is still wet so it sticks. You can use a small amount of frosting on the teddy grahams to stick them to the rainbow belt candy.
  • You can put graham crackers into a small bag and bang with a rolling pin to make the crumbs.
